Italian Baked Sausage and Eggs [RECIPE]

Oh, do I have a recipe for you today! It had been quite a while since I last ate Italian sausage. But when I stumbled across this recipe, my mouth began to salivate with longing. Italian sausage and eggs reminds me of Shakshuka which I adore. This recipe inspired by Taste of Home is super easy to make, flexible in the ingredients, easy on the wallet, and loaded with flavor. I know you’re going to love it too. Mr. Noob Chef was trying to hunt down garlic bread at the store, but we ended up ripping up a fresh baguette to mop up the tomato and basil juices of this dish. It was heavenly. Eggs are baked right on top of a sausage, vegetable, and marinara sauce. Dollops of ricotta cheese are tucked under each egg to make everything cheesy, spicy, and flavorful.

Italian Baked Eggs and Sausage
- 1 lb. Italian sausage
- 1 jar (24 ounces) fire roasted tomato and garlic pasta sauce
- 1 can fire-roasted tomatoes, drained
- 1 can white beans, drained
- 1 onion, chopped
- 3 cups bell peppers, diced
- 1 cup chopped frozen spinach
- 1 tablespoon minced garlic
- 1 cup ricotta cheese
- 8 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon minced fresh basil
- Bread to serve on the side
Gather your ingredients and preheat the oven to 350 degrees (F).
In a large pan or wok, drizzle a little oil and turn the stove to medium-high. Chop up the sausage into bite sized pieces and fry until brown.
Add the frozen vegetables and onion to your pan.
Cook until tender, about 10 minutes.
Add the marinara sauce, fire roasted tomatoes, garlic, and beans to the wok. Mix well to combine.
Pour into a large casserole dish and spoon a dollop of ricotta across each part of the casserole where you will crack an egg on top.
Crack an egg over each ricotta dollop. Then garnish with Parmesan cheese, basil, salt, and black pepper.
Bake in the oven at 350 degrees (F) for 40 minutes.
