Cheesy Broccoli and Macaroni [Weeknight Recipe]

Good Afternoon Friends!

I hope you all are doing well. The weekend is almost here!! Yay!! Do you have plans for this weekend? Today I have a delicious, easy, budget-friendly recipe for you. But first I must apologize, because I couldn’t get the best picture for this dish. It’s a simple one, consisting of: macaroni, Parmesan, garlic, olive oil, and roasted broccoli. It’s easy, light, and simple to pull together for a weeknight supper. But it’s so simple that it doesn’t really photograph well. Oh, how I wish you could be here in my tiny home to smell the roasted garlic…. to taste the cheese and quality olive oil and how they come together for the perfect sauce! It would surely make you swoon.

Cheesy Broccoli and Macaroni 

Serves: 8


For the Broccoli: 

  • 2 (16 ounce) bags frozen broccoli florets
  • 1 tablespoon garlic powder
  • 1 generous drizzle olive oil

For the Pasta: 

  • 1 tablespoon minced garlic
  • 1 box elbow macaroni pasta
  • 1 cup grated Parmesan cheese
  • 1 pinch of salt and black pepper
  • 1 generous drizzle olive oil


  1. Preheat the oven to 400 degrees (F). Toss the frozen broccoli on a baking sheet and drizzle with olive oil. Sprinkle with garlic powder and roast for 20 minutes.
  2. While the broccoli is roasting, set a large pot on the stove full of water to boil the pasta. Boil pasta according to instructions. Mine took 6-7 minutes. Drain and pour into a large mixing bowl.
  3. While the pasta is hot, add in the grated cheese, minced garlic, salt, black pepper, and olive oil. Mix everything together and watch the cheese begin to melt!
  4. Lastly, add the roasted garlic in and mix to combine.
  5. Serve hot and enjoy! You’ve earned it! ❤
