Avocado-Sauerkraut Grilled Cheese Sandwiches

Good Afternoon Friends,

I needed a reason to write on here again. I’ve always posted recipes about dishes that made me swoon from head to toe. I’ve written when the timing felt “right” and for the longest time my attention was turned elsewhere. But several days ago every cell in my body craved sauerkraut. For a few years I made my own kimchi and tossed it into multiple dishes over the winter. But my sauerkraut craving was on another level. I just had to drive to the store and get some right then and there!

So I did.

With jar in hand I bounced like a kid on Christmas Day back to my car to dream up how I would use up this pickled cabbage. (No doubt I made a few people turn heads that day in the grocery store lol). As I nestled up in my home I began to let my taste buds, and my body, be my guide. I wanted something warm since it was cool outside. I wanted comfort, but simplicity. Nothing too technical but still elevated enough to make me work for the moment when I could finally sink my teeth into the dish. That’s when I knew exactly what I wanted to eat:

Grilled cheese.

Growing up my parents would make grilled cheese with American cheese slices or those Kraft singles that seriously taste like plastic. But as I’ve gotten older and settled down into my own kitchen, grilled cheese sandwiches are a meal fit for a king. We pair different cheeses with other items such as: sliced apples, thinly sliced ham, or in this case, mashed avocado. Today’s sandwich is an avocado, Gouda, and sauerkraut grilled cheese sandwich. It’s creamy. It’s tangy. And it’s absolutely sublime. It’s humble and simple, yet it will make you feel like you’re eating a freshly cooked hot sandwich all for a fraction of the price! Avocado-Sauerkraut Grilled Cheese Sandwiches 

Makes: 1 sandwich (*double ingredients for more if need be)

Ingredients: 

  • 1 ripe avocado, mashed
  • 3 tablespoons sauerkraut
  • 4 slices of Gouda cheese
  • 2 slices of artisan bread (I chose rosemary-sourdough)
  • 2 tablespoons of butter

Instructions: 

  1. Begin by placing the butter in a grill pan or large cooking pan to medium-high heat to melt the butter.
  2. Smear the avocado on both sides of the bread.
  3. Place 2 slices of Gouda cheese on both sides of the bread.
  4. Take several tablespoons of sauerkraut and place it on each side of the sandwich.
  5. Carefully place both sides of the sandwich open faced into the hot pan and let cook for 3-4 minutes or until the cheese begins to melt.
  6. Then flip one side onto the other and gently press together with your spatula.
  7. Remove and set onto a plate. Slice in half and serve hot. Enjoy!
